M Sushi Cary is chef Michael Lee’s second location, a small room at Fenton given over to high-quality seafood. The menu is short on purpose, and it turns on what the season brings in.
Fish arrives directly from Japan, Korea, and the United States, and only seasonal seafood the kitchen considers special makes it onto the list. The dining room follows the same idea, pared back so that the food carries the meal. Everything on the plate reflects both fresh ingredients and the traditions behind them.
